Loaded Sweet Potato Fries

  1. Preheat oven to 450 degrees.
  2. Peel 2 to 3 sweet potatoes and cut them into fries.
  3. Place the fries in 1 layer on 2 baking sheets covered with parchment paper.
  4. Spray the fries with olive oil spray. Then, season with salt and pepper.
  5. Place the fries in the oven and cook for 25 minutes.
  6. While the fries bake, cook 1 pound of ground beef in a large pan over medium heat.
  7. Season the ground beef with garlic powder, chili powder and smoked paprika. Cook the meat all the way through.
  8. While the meat is cooking, cut 1 red or orange bell pepper into small pieces (dice).
  9. After the meat is fully cooked, add the bell pepper to the pan and mix in with the meat.
  10. Drain and rinse 1 can of corn and add it to the pan. Lower the stove temperature and cook the meat, pepper and corn mixture until the fries are done.
  11. Once the fries are done, serve the fries with the meat mixture on top and lightly add Sriracha Mayo on top.
