Ingredients
- 2 to 3 sweet potatoes
- 100% Extra Virgin Olive Oil Spray
- Salt
- Pepper
- 1 pound lean ground beef
- Garlic Powder
- Chili Powder
- Smoked Paprika
- 1 can of corn (no salt added)
- 1 red or orange bell pepper
- Sriracha Mayo
Instructions
- Preheat oven to 450 degrees.
- Peel 2 to 3 sweet potatoes and cut them into fries.
- Place the fries in 1 layer on 2 baking sheets covered with parchment paper.
- Spray the fries with olive oil spray. Then, season with salt and pepper.
- Place the fries in the oven and cook for 25 minutes.
- While the fries bake, cook 1 pound of ground beef in a large pan over medium heat.
- Season the ground beef with garlic powder, chili powder and smoked paprika. Cook the meat all the way through.
- While the meat is cooking, cut 1 red or orange bell pepper into small pieces (dice).
- After the meat is fully cooked, add the bell pepper to the pan and mix in with the meat.
- Drain and rinse 1 can of corn and add it to the pan. Lower the stove temperature and cook the meat, pepper and corn mixture until the fries are done.
- Once the fries are done, serve the fries with the meat mixture on top and lightly add Sriracha Mayo on top.
